A 35-year-old against an expectancy of 80 has used 43.75%, leaving 56.25% or 45 years. That is the number almost every calculator of this kind gives you, and it is wrong in an interesting and encouraging way.
Life expectancy at birth is an average across everyone born in a given year, including those who die young. Once you have reached 35, you are no longer in the pool that contained infant mortality, childhood illness, and the accident-heavy late teens and twenties. You have already cleared those hazards, so your expected age at death is higher than the headline figure.
Demographers call this conditional life expectancy, and the effect is large at older ages:

The bottom row makes the point unanswerable. Reaching 90 does not mean you are ten years overdue; it means your expected remaining life is around four more years. A naive percentage calculation says a 90-year-old has lived 112% of their life, which is obvious nonsense. Expectancy is a moving target that recedes as you approach it.
Global life expectancy at birth is roughly 73 years, but the spread between countries is close to three decades, and within any country the gap between the richest and poorest districts is often ten years or more. Women outlive men essentially everywhere, typically by four to six years.
There is also a distinction that trips up almost everyone. A period life table asks what would happen if today mortality rates never changed. A cohort table attempts to project the improvements that are likely over your actual remaining decades. Because mortality has generally been falling, cohort figures are higher — often by several years for people currently young. Most published headline numbers are period figures, so they are conservative for anyone under about 50.
It cannot know anything about you. It is a population average applied to one person, and the variance around it is enormous. The factors that actually move an individual outcome — smoking, which costs roughly a decade; physical activity; alcohol; body weight; blood pressure; income; education; access to healthcare; genetics; and simple accident — are all invisible to a subtraction. Two people the same age can have honestly different outlooks by twenty years.
It also cannot account for the future. Someone currently 30 will live most of their remaining life under medical technology that does not exist yet, and against risks that are not in any current table. Treat the figure as a rough sense of proportion, not a forecast.

The value is not precision, it is proportion. Realising that roughly 40% is gone tends to reframe how the remaining share is allocated far more effectively than a vague sense of time passing. It is also useful in a narrower form: the share of your working life used, or of the years your children will live at home, which is a much shorter and more urgent countdown than the whole lifespan.
If you switch from a fixed expectancy to a conditional one, yes. Your denominator grows each year you survive, so the fraction can move less than you expect.
